Chocolate dragees (pronounced drazh-AY) is a sweet consisting of a centre covered with a coating, such as chocolate or sugar. These dragees are created by the centres tumbling in a panning machine, and melted chocolate drizzled in slowly to create fine layers of chocolate around the centres.
